- 1 lb. Tomatillos
- 2 Garlic Cloves
- 3 Chili
- 3 Green Onions
- a handful of Cilantro
- 1 tsp. Red Wine Vinegar
- 1/2 tsp. Dried Oregano [skipped this because i didn’t have any. Didn’t miss it either.]
- 1/2 tsp. Salt
- Peel the tomatillos and wash. Peel garlic, leaving the cloves whole. Cut the root ends off the scallions.
- In a skillet, without oil, roast the tomatillos, scallions, garlic and chili’s [jalapenos for me, seeded] until they are well cooked and slightly blackened.
- Put all the vegetables in a food processor and add cilantro, vinegar, oregano and salt. Blend till smooth.
