Tomatillo Salsa

  • 1 lb. Tomatillos
  • 2 Garlic Cloves
  • 3 Chili
  • 3 Green Onions
  • a handful of Cilantro
  • 1 tsp. Red Wine Vinegar
  • 1/2 tsp. Dried Oregano [skipped this because i didn’t have any. Didn’t miss it either.]
  • 1/2 tsp. Salt


  1. Peel the tomatillos and wash. Peel garlic, leaving the cloves whole. Cut the root ends off the scallions.
  2. In a skillet, without oil, roast the tomatillos, scallions, garlic and chili’s [jalapenos for me, seeded] until they are well cooked and slightly blackened.
  3. Put all the vegetables in a food processor and add cilantro, vinegar, oregano and salt. Blend till smooth.
